Ingredients1 can of chick peas (drained and rinsed)1 clove of garlic (crushed) 1 tbsp fresh parsley (chopped) 1 tbsp fresh mint (chopped) 1 tsp ground cumin A little grated lemon zest 1 tbsp lemon juice 2 tbsp fresh breadcrumbs Pepper to taste |

Method1. Put the chickpeas in a food processor and blend until smooth.2. Add the rest of the ingredients and mix well. 3. Form into balls using your hands, squeezing the mixture so that it sticks together.Pop in the fridge for about 30 mins to firm up. 4. Shallow fry a few falafels at a time in olive oil, for about 10 mins (until golden brown) Serve in pitta bread with salad and greek yogurt. They also taste nice dipped in tomato ketchup! These are nice and mild, so suitable for young children, but you could spice them up a bit with some chilli , if you prefer. Just add the chilli (either fresh, powdered or chilli sauce) to the mixture before forming into balls. | |||||||||||||||||||
