IngredientsWhole pineapple cut in 2.5 cm (1") cubes2 onions 5 cm (2") piece of root ginger, grated 1 tsp chilli powder 1 tsp ground cinammon 1 tsp coriander 1 tsp cumin 1 tsp paprika 1 lime 2 tbsp soft dark sugar 2 tbsp veg oil 300 ml water Salt and pepper to taste |

Method1. Stir fry the onion and ginger for 5 mins2. Add the spices and fry for another minute (without burning!) 3. Add the water and pineapple, plus the juice of the lime mixed with the sugar, cover with a lid and simmer for 15 mins 4. Take lid off for another 15 mins, allowing the liquid to evaporate down to a sticky sauce 5. Add salt and pepper to taste, add more lime juice for a more sour flavour if preferred |
