Ingredients

For the cake:

110g (4 oz) SR flour
1/2 level tsp each of baking powder and ground cinnamon
70g (2.5 oz) sugar
1 egg
6 tbsp (3 fl oz) milk
40g (1.5 oz) butter, melted

For the topping:

450g (1 lb) plums, stoned and halved around the waist
60g (2 oz) sugar
knob of butter, melted

Handy Hint

Freezes well, if you can get it that far!

Method

1. Sieve flour, baking powder and cinnamon then add sugar, butter, egg and milk and beat into a smooth, thick batter.
2. Spoon into an 8inch round tin and brush with the knob of melted butter.
3. Arrange the plums, cut side up, on the mixture, then sprinkle the sugar on top.
4. Bake at 190C/gas 5 for 40 - 45 minutes. Serve warm or cold.

I only ever make this in Autumn, when the English plums are available in abundance - it's a seasonal treat. I like it slightly warm with creme fraiche or sour cream - the slight sourness of the cream sets of the sweetness of the plums and streusel topping wonderfully.
