Ingredients

225g (8 oz) plain wholemeal flour
1 teasp baking powder
2 eggs
2 tablesps cocoa powder
2 tables olive oil
2 medium beetroots, cooked and grated

Handy Hint

Watch out for red fingers when grating the beetroot. It does wash out after a few washes.

Method

1. Beat everything together to a stiff dough.
2. Roll into a long sausage, wrap in cling film and put in fridge for 20 mins.
3. Set oven to 180 degrees celcius.
4. Cut the dough into wheels about 1/2 inch thick and place on baking tray. Bake for approx 20 mins, and remove from oven when they are still a little soft if you want them chewy, or leave a few minutes more with the oven off to make them crisper.

Delicious and great for kids who avoid vegetables.

I've just tried the recipe, and not really liking them. Were they meant to be without sugar? The consistency seems fine but don't taste very nice at all. Also, the dough was very sticky so difficult to roll into sausage and impossible to cut into wheels. With the grating I would say it's probably nicer to grate the beetroots finely (instead of the bigger one I used as it wasn't specified). Unfortunately I'll have to throw this batch away :-(

I've used this recipe with courgettes and grated carrot and all work well.
