Ingredients

2 corn tortillas slightly fried
1/2 tip chopped tomatoes
1 onion chopped finely
1 clove of garlic
Salt and pepper to taste
1 or 2 eggs
1 can red kidney beans
Oil

Handy Hint

If you like extra flavour add to your dish Chile Chipotle sauce this give the breakfast a kick. It is tasty, filling, good for veggies and you can go all the way till 2pm without feeling hungry. If you wish to use this dish as a brunch or even lunch it's as a satisfying experience

Method

1. For the sauce - place in a small pan a little oil, half the onion and the garlic and fry til golden
2. Add tomatoes, season to taste and simmer
3. For the refried beans - place in a small pan a little oil then add the rest of onion and fry til golden
4. Add beans then mash (like mashed potatoes) You can also add oregano if you wish.
5. Lightly fry 2 tortillas, place on kitchen paper to drain off any oil, then place on plate
6. Fry egg(s), place on top of tortilla then top with tomato sauce and serve with your refried beans.

Serve with a nice cup of coffee

as I mentioned above, making this breakfast is a satisfying experience, could be taken as a brunch or lunch - I normally buy a french bagette - You know a bit of history - Mexico was once under the rule of the French - The Mexican Empire was given to Maximilian of Austria and Charlotte of Belgium by Napoleon as a wedding present - what a present! therefore we have quite a few french traditions - culinary, cultural, historical, the list is endless we even have an Austrian Castle in the Centre of Mexico City called Chapultepec (cricket) Castle visit it's quite an experience. In my next recipe I will tell you a bit more of the mexican experience whilst cooking together with the history, and honestly I'm only telling you things I lived and learned with my own granma and greatgranma have a lovely weekend
