Ingredients

New Potatoes
Salt and pepper
Olive Oil
Rosemary (or other favourite herb)

Method

1. Boil potatoes until fork tender.
2. Drizzle olive oil onto oven tray. Be generous!
3. Put potatoes on tray giving them plenty of room to spread out.
4. Next, grab your potato masher and gently press down on the potato until it slightly mashes. Then rotate the masher 90 degrees and finish flattening it. Don't completely mash it, it still needs to hold its shape.
5. Brush the tops rather generously with olive oil.
6. Sprinkle with salt and pepper. Be generous again!
7. Whatever herb you use, just chop it pretty finely and sprinkle over the top.
8. Put in top of very hot oven for 20-25 minutes.
