Ingredients

20 Ritz crackers, crushed
1 cup chopped pecans
1 cup white sugar
1 tsp vanilla
pinch salt
3 egg whites

Handy Hint

9 inch pie plate This is an "impossible" pie, in that you don't need a crust.

Method

1. Beat egg whites until stiff.
2. Add sugar, salt and vanilla.
3. Gradually add nuts and crumbs. Stir together.
4. Grease pie plate, fill with mixture. Bake for 25 to 30 min at 325 F/165 C.
