Ingredients

1 bag of tortilla chips
1 can of kidney beans
1 clove of garlic
1 medium size onion
1 pepper
1 can tomato puree
100g cheddar cheese
2 tbsp olive oil
Salt, pepper to taste

Handy Hint

you can serve with a green salad or an avocado salad

Method

1. Finely chop half the onion, the garlic and the pepper and fry til golden
2. Add can of tomatoes, salt & pepper and a cup of water then simmer for 15 minutes.
3. Fry the remainder of the onion till golden and add the can of beans
4. Mash (like you would with potatoes) to make what's known as refried Mexican beans
5. In a pyrex dish place all the refried beans then top with the tortilla chips. Cover with tomato sauce, add grated cheddar and place in the oven for 15 minutes.

It is nice for lunch and a good veggie dinner. You can also add tabasco sauce. It is good, wholesome, easy to make and very tasty; good for all ages, what else can I say to praise this simple dish - just to say it shows the versatility of the bean. Watch this space... As a comment it is interesting to see how versatile the bean can be, you make it as soup, as a main dish, to accompany your main course, add it in dishes, salads, the list is endless. It is wholesome and very good for your digestion
