Ingredients

4 sticks celery
1 onion
1 small tin sweetcorn
1 small potato
1 stock cube - your choice of flavour
250ml (1/2 pint) milk
250ml (1/2 pint) water
2 tbsps cooking oil
salt and pepper to season

Handy Hint

Remove a few spoonfuls of the soup before blending if you want some chunky pieces in it.

Method

1. In a large pan, sweat the onions and celery in the oil, then add cubed, peeled potato.
2. Mix stock cube in water and add to pan, bringing to a simmer and stirring occasionally.
3. After 10 mins add the sweetcorn and seasoning, simmer for a further 5 mins then add the milk.
4. Blend to a smooth consistency and add more liquid if needed.
