Ingredients

For the base:

900g (2lb) cooked mashed potatoes (mixed with milk & butter/marg)
1 raw egg
55g (2oz) grated cheddar cheese
1tsp mustard
Salt and pepper

For the top layer:

55g (2oz) butter
55g (2oz) flour
1/4 litre (1/2 pint) milk
110g (4oz) grated cheddar
2 eggs (hardboiled and chopped)
165g cooked smoked haddock (or cod)
Pinch of cayenne pepper
Salt and pepper

Method

1. Make a white sauce with the butter, flour and milk
2. Mix in 110g grated cheddar cheese, the 2 chopped hard boiled eggs, the cooked fish, a pinch of cayenne pepper, salt and pepper.
3. Put potato base in a large greased casserole dish.
4. Pour sauce over the top.
5. Bake at 175C/350F/Mark 4 for 30-40 minutes until golden brown on top.

Serve with green vegetables.

Freezes well but takes a long time to thaw out (it doesn’t cook well from frozen)
