Ingredients

85g butter or margarine
225g self-raising flour
85g caster sugar
1 medium egg, beaten
85g blueberries
1 tbsp granulated sugar

Method

1. Rinse blueberries & stir in the sugar to coat them. Set aside.
2. Preheat oven to 200C/400F/Gas 6.
3. Rub butter into the flour in a bowl. Add caster sugar & make a well in the centre. Add the egg. Mix to form a dough.
4. Divide into 12 pieces & shape into rough balls the size of a large walnut. Place on silicone paper on a baking tray, leaving a good gap between them. Make a dent in the top with the end of a wooden spoon, then spoon in about 4 blueberries.
5. Bake for about 12 minutes until just golden. Remove & cool.

Can replace blueberries with teaspoon of jam. Quick to make for unexpected visits. Enjoyed by kids & adults alike.
