1.4kg (3lb) beetroot
2 large onions
225g (½lb) apples
225g (½lb) sugar
Juice of one lemon
¼ tsp ground ginger
475ml (1 pint) vinegar

Handy Hint

This recipe was a winner at our local horticultural show!


1. Boil beetroot in salt water for one and a half hours, peel and cube.
2. Cut onions and apples, place into a pan with the rest of the ingredients and boil for 20 minutes.
3. Add beetroot and boil for a further 20 minutes or until thick.

I do a very similar recipe but add 8oz raisins, more ginger (2 tsps) and find it better with the cooked beetroot grated instead of chopped. Worth trying either recipe as is one of the most popular chutneys I make!
