Ingredients

shop-bought brioche loaf
2 eggs
1 tbsp sugar
pinch cinnamon
icing sugar to dust
fruit to top (we like strawberries or bananas) sliced up
sunflower oil

Handy Hint

Make more than you think you need, you will definitely want a second slice.

Method

1) Whisk eggs in a flatish dish - add the sugar
2) Slice the brioche loaf
3) Heat up the oil in a heavy bottomed pan. This should be hot but not smoking as it will burn.
4) Dip brioche slices into the egg and throw in pan. When brown turn and cook the other side (about 2 minutes per side).
5) Dust with icing sugar and pile on the fruit

I have reluctant breakfasters aged three and four and they devour this recipe. It even gets them eating fruit for goodness sake, what's not to like!
