Ingredients

50g risotto rice
300ml water
2 tomatoes skinned and seeded
1 small courgette (finely chopped)
2 basil leaves (finely chopped)
50g mascarpone

Method

1. Cook the rice in the boiling water until soft. Drain.
2. Return to the pan and stir in the courgette, continuing to heat gently for a minute or two.
3. Meanwhile finely chop the tomato and stir into the rice along with the mascarpone and basil.
