Ingredients50g risotto rice300ml water 2 tomatoes skinned and seeded 1 small courgette (finely chopped) 2 basil leaves (finely chopped) 50g mascarpone |

Method1. Cook the rice in the boiling water until soft. Drain.2. Return to the pan and stir in the courgette, continuing to heat gently for a minute or two. 3. Meanwhile finely chop the tomato and stir into the rice along with the mascarpone and basil. |
