Ingredients

2 tbsp olive oil
1 onion, chopped
1 bag watercress, chopped
500ml vegetable stock
200ml milk
1 pack Dolcelatte cheese
Salt and pepper, to taste

Method

1. Heat the oil and gently fry the onion for 5 minutes until soft and transparent.
2. Add the stock, milk, cheese and watercress then simmer very gently for 5 mins, stirring frequently. Add salt and pepper if required. 3. Liquidize and serve with warm crusty baguette. Enjoy!
