Ingredients2 large onions (diced)50g butter 250g fresh tomatoes 250g tinned tomatoes (chopped) 15ml (1 tbsp) tomato puree 1 clove garlic 1 tbsp mixed spice 1 tsp sugar Salt & pepper Mixed herbs 1 litre chicken / vegetable stock |
Handy HintI think it is better liquidised to produce a smooth soup Don't add more mixed spice than a level tablespoon!! |

Method1. Fry the diced onions in the butter until tender and translucent, but not brown.2. Skin, deseed and chop the fresh tomatoes. 3. Add the chopped tomatoes (fresh and tinned) and the puree to the pan. Add the crushed garlic, spice, sugar, seasoning, herbs and stock and simmer the soup for 10-15 minutes. Serve very hot. Garnish the soup with croutons or chopped parsley. |
