Ingredients

2 large onions (diced)
50g butter
250g fresh tomatoes
250g tinned tomatoes (chopped)
15ml (1 tbsp) tomato puree
1 clove garlic
1 tbsp mixed spice
1 tsp sugar
Salt & pepper
Mixed herbs
1 litre chicken / vegetable stock

Handy Hint

I think it is better liquidised to produce a smooth soup Don't add more mixed spice than a level tablespoon!!

Method

1. Fry the diced onions in the butter until tender and translucent, but not brown.
2. Skin, deseed and chop the fresh tomatoes.
3. Add the chopped tomatoes (fresh and tinned) and the puree to the pan. Add the crushed garlic, spice, sugar, seasoning, herbs and stock and simmer the soup for 10-15 minutes. Serve very hot.

Garnish the soup with croutons or chopped parsley.

I made double quantities of this soup for a St. George's do. I only used 1 tbsp of mixed spice and that seemed to be enough. Next time I will try it without deseeding the tomatoes. I used small vine tomatoes so it was a bit tedious and I reckoned the tinned toms. wouldn't have been deseeded. Everyone was very complimentary.
