1.1kg (2.5lbs) green tomatoes
2 onions
120g (1/2 cup) cooking salt
250g (1 cup) sugar
500ml (2 cups) cider vinegar
60g (1/2 cup) sultanas
1/2 tsp mixed spice
1/2 tsp cinnamon
2 tsp curry powder
Pinch cayenne pepper
2 tsp cornflour

Handy Hint

I sterilise clean jars in microwave for 2 mins.


1. Slice tomatoes & onions into thin rounds. Combine with salt in large non-metallic bowl and add enough water to cover. Place small plate on top to keep submerged & leave to stand overnight.
2. Drain tomatoes & onion & rinse well. Place in large pan and add sugar, vinegar,sultanas & spices. Stir over low hear until sugar dissolved.
3. Bring to boil, reduce heat & simmer, stir often until vegetables are soft.
4. Add 2 teaspoons of water to cornflour,mix well & stir into mixture. Stir over medium heat until it boils & thickens.
5. Spoon into clean warm jars & seal. Turn upside down for 2 mins then invert and cool. Leave for 1 month before opening. Store in cool, dark place for up to 12 months. Once opened, refrigerate for up to 6 weeks.

If you have lots of green tomatoes at end of season, this is a good way to use them. Makes about 5/6lbs and is very good with cold meat,poultry or cheese.
