Ingredients

110g (4oz) margarine
85g (3oz) caster sugar
85g (3oz or 3 level tbsp) golden syrup
225g (8oz) plain flour
2 level tsp ground ginger
55g (2oz) rolled oats
1 level tbsp bicarbonate of soda dissolved in 1 tbsp milk

Method

1. Place margarine, cut into pieces, sugar and golden syrup in mixer bowl and run machine until the mixture is light and fluffy.
2. Add flour, ginger and rolled oats, together with bicarbonate of soda dissolved in milk and until smooth.
3. Cut mixture into 24 pieces and shape into balls.
4. Place on a baking sheet and flatten slightly with a fork.
5. Bake at 170C (325F/Gas mark 3) for 15 - 20 minutes.
