Ingredientsany veg you have hiding at the back of the fridgePotatoes 1 tin chopped tomatoes 1 tin or carton passata 1 tbsp dark tahini 1 tbsp 'real' peanut butter (i.e. stuff from a health food shop) 1 tin kidney beans (or any other bean you fancy) 2 vegetable stock cubes 1 or 2 tsp vegetarian gravy granules Dash of soy sauce (low salt is best) Cold water |
Handy HintThis recipe is a 'throw in all you have' one. You can put any veg in it that you need to use up. The kidney beans and peanut butter add the protein but it is a very low cal meal and will last for a few nights |

Method1. Put all the ingredients apart from the soy sauce and the gravy granules into a big pot. Note - make sure you cut the potatoes up into small, chip sized pieces so they cook right through2. Top up to just over the top of the mixture with the water 3. Cover and put in the microwave for three x ten minute bursts. (Stir in between) 4. Add the gravy granules to thicken the dish Preferably leave overnight for the stew to thicken up nicely. Reheat to eat, and add the soy sauce. You can also put plain yoghurt on the top to garnish, or mix it in to make the mixture more creamy. |
