Ingredients

2 medium onions (chopped)
6 tsp butter/margarine
4 courgettes (medium - chopped)
4 cups chicken broth
1 pinch nutmeg
1 pinch paprika
Salt/pepper
2 tsp lemon juice

Handy Hint

I use more courgettes than it calls for. Sometimes I microwave a sweet potato and add it to the soup while cooking.

Method

1. Sauté onions in butter for about 5 min
2. Add courgettes and continue to sauté to cook on all sides
3. Add stock and seasoning
4. Toss in potato
5. Simmer covered for about 20 min.....until the vegetables are soft
6. Blend in blender - but I use a hand blender to keep it slightly chunky.
7. Add lemon. Adjust stock or seasoning to taste

My family love this soup. It is sometimes a starter but with a nice salad and crusty bread makes a nice main course.
