Ingredients

200g self-raising flour
1 tsp baking powder
1 egg
300ml milk
knob of butter
150g pack blueberries

Handy Hint

Use frozen blueberries if you don't have fresh ones. Top pancakes with vanilla yogurt, honey, sliced bananas and slice strawberries for an amazingly bright and tasty breakfast.

Method

1. Mix dry ingredients together then beat in the egg and milk.
2. Melt knob of butter in microwave - stir into mixture.
3. Add blueberries.
4. Use soup ladle to measure batter into frying pan - fry until golden.
