Ingredients

1kg tomatoes (peeled, and halved)
1 onion or shallot (halved)
a knob of butter
Sea salt and pepper (if liked) to taste.

Handy Hint

For different occasions, try floating slices of fresh ginger or a sprig or rosemary in the sauce as it cooks: remove before blending

Method

1. Scoop the tomato seeds and liquor into a jug, break up with a stick blender, and drain.
2. Chuck the seeds, and add the juice to the chopped tomatoes in a saucepan with the butter and the onion.
3. Stew gently, stirring periodically, on a medium heat for about 20 minutes. Lift out the bits of onion, and blend the sauce with the stick blender as much or as little as you like.

Based on Marcella Hazan's wonderful sauce, it has a pleasant onion flavour without having bits of onion actually in the sauce. It is both supremely simple and very elegant.
