One plastic pack cooked beetroot
About 200g of Easy Tomato Sauce (see my other recipe)
2 tsp veggie stock powder in 500ml hot water

To serve
Feta cheese


1. Cut up the beetroot into 1/2 inch cubes.
2. Put it into a saucepan with any juice that runs out of ti and the tomato sauce and stock.
3. Bring to boil and simmer about 10 minutes.
4. Cool a little and blend until smooth. Reheat. Serve a bowl of feta cheese cubes separately, to hand round.
