Method1. Cut up and clean the calamari, then soak in the red wine for at least two hours with crushed garlic and half the oil - even better if left over night.2. Put in heavy casserole and cook in a medium oven for 2 hours, add the veg after the first half hour and add the rest of the oil. This stew is rich and is best with plain rice, you could thicken the sauce or even better add a handful of orzo (rice shaped pasta available in Greece and some shops in UK) |
