Ingredients

Approx 1kg (frozen or fresh) calamari cleaned and cut into inch pieces.
Half a litre of red wine
1 large/2 small red onions
Mixture of veg such as peppers, carrots , courgettes
2 cloves garlic
Half a cup of olive oil

Handy Hint

Marinading the calamari in the red wine ensures that it is soft and tender when cooked

Method

1. Cut up and clean the calamari, then soak in the red wine for at least two hours with crushed garlic and half the oil - even better if left over night.
2. Put in heavy casserole and cook in a medium oven for 2 hours, add the veg after the first half hour and add the rest of the oil.

This stew is rich and is best with plain rice, you could thicken the sauce or even better add a handful of orzo (rice shaped pasta available in Greece and some shops in UK)

I live for part of the year in Greece and often make this dish - I was given the recipe by the owner of the local taverna, though she usually cooks octupus this way, while I prefer calamari.
