French onion soup recipe from Gilly70
Ingredients2 tbsp olive oil
28g (1oz) butter
680g (1lb 8oz) sliced onions
2 tsp caster sugar
2 garlic cloves
2 pints stock
1/4 litre (1/2 pint) dry white wine
Salt and pepper to taste
6 slices French bread
225g (8oz) Gruyere cheese (grated)
Handy HintSlices of bread & cheese can be prepared in advance and kept until needed. The hot soup will heat bread!
Method1. Heat oil & butter in a pan.
2. Add onions and sugar and cook for 20mins or until caramelised.
3. Add garlic & cook for 1 minute.
4. Add stock, wine, salt and pepper and simmer for 1 hour.
5. Cover slices of bread with cheese and grill.
To serve - lay the toasted pieces of bread & cheese in bottom of soup bowl & ladle hot soup onto them. Serve immediately
