Ingredients

1 shoulder of Lamb
Roll of foil
Casserole dish with lid large enough to take the shoulder whole or a deep roasting tin that you can cover completely with foil.

Method

1. Heat the oven to Mark 3 gas or 325F/170C.
2. Wrap the shoulder of lamb completely in two layers of kitchen foil and place in the casserole dish and cover with the lid. If you are using the rosting tin, place the foil covered lamb in the dish then wrap the dish itself with foil, so it is completely sealed.
3. Place in oven and let cook for about 4 hours. When cooked the fat will all have melted and the lamb will fall off the bone. Truly delicious and enough for a family of four.

This recipe is based on Kleftika, served in Greek restaurants, but without any additions it is economical and the perfect way to serve Lamb that is succulent and melts in the mouth. Do it this way instead of roast leg of lamb, more meat and much more tender!
