Ingredients

About 1/4 litre (1/2 pint) of cold tea
115g (4oz) brown sugar
1lb cake fruit
1 egg (lightly beaten)
225g (8oz) self-raising flour

Method

1. Soak fruit and sugar overnight in cold tea.
2. Next day, add beaten egg and flour.
3. Pour into well-greased loaf tin and bak at Gas. 3 or 160 fan for 1 and half to two hours.

This is very good tempered, and can be left longer in the oven, or it can be hotter (but keep an eye on it if so). My daughter has used less liquid and I have used more, but it is always delicious. Waitrose's cake fruit with cranberries is specially good. The long cooking time means that while the oven is on, there is time to make and bake something else. I nearly always make Jammy Shortbread squares as they are grandchildren's favourites.
