Ingredients

For the pastry
340g (12oz) plain flour
225g (8oz) hard margarine
85g (3oz) caster sugar
½ egg

For the filling
225g (8oz) chopped dates
115g (4oz) sultanas
2 medium cooking apples

For the topping
55g (2oz) butter
115g (4oz) soft brown sugar
4 tbsp dark rum
½ tsp each of cinnamon and mace

To finish
Egg wash and demerara sugar

Handy Hint

Buy some ready made sweet pastry and cut the preparation time in half! Make ahead of time and freeze.

Method

1. Make the pastry in the usual way using the egg to bind together, put to one side while making the filling and topping
2. For the topping: melt the butter, add the sugar rum and spices. Mix well, leave to one side to set a little.
3. For the filling; put the dates and sultanas into a large bowl. Peel the apples and grate them into the bowl. Mix well with the dried fruit. Tip the mixture into the prepared pastry case.
4. Pour the rum mixture over the fruit filling and spread evenly.
5. Roll out the remaining pastry for the top. Dampen the pastry edges before putting on the pastry top and then trim the excess pastry away.
6. Egg wash the top of the pie and sprinkle with Demerara sugar, make a slit in the top to allow the steam to escape.
7. Bake in a preheated oven at 180c gas mark 4 until golden. Serve with Cumberland Rum Butter. Excellent to freeze

made this as a tray bake for church fair, double filling and 1/2 again of pastry. Soaked filling in melted rum mix. lined swizroll tin with foil line parchment and rolled base straight on to lining, marked into squares before baking, much better than mince pies, my old mum says yum yum.
