Ingredients

225g (8oz) celery, chopped
225g (8oz) onion, chopped
110g (4oz) butter
280g (10oz) fresh breadcrumbs
4 tbsp chopped parsley
Grated zest and juice of a large lemon
2 eggs lightly beaten
Seasoning

Handy Hint

This stuffing can be made well in advance and frozen uncooked till required.

Method

1. Soften the celery and onion in the butter over a low heat, covered, for 20 minutes.
2. Remove from heat, add breadcrumbs, parsley, lemon rind and juice, beaten eggs and seasoning.
3. Bake in a greased dish at 190C/375F/Gas 5 for 40 minutes or use to stuff a bird.

Popular with vegetarians as well as carnivores! This recipe came from Nova, a great magazine in the 70's.
