Ingredients

For the pastry:

225g (8oz) self-raising flour
55g (2oz) sugar
110g (4oz) margarine
1 egg yolk
15mls cold water

For the filling:

340g (12oz) currants
1 tsp cinnamon
1 tsp mixed spice
3 tsp cornflour (mixed with a little milk)
3/4 cup sugar
1 grated cooking apple

Method

1. To make the pastry rub in margarine and flour to look like fine breadcrumbs. Add sugar, egg yolk and water. Mix together. Wrap in cling film and put in fridge for 1/2 hour. Then roll out 1/2 the pastry to fit an oblong well greased baking tray.
2. To make the filling put all the ingredients in a pan with 1 cup of water. Bring to the boil and simmer for 15 mins, add 3 x 5ml tsp cornflour (which has been mixed with a little milk) to the boiling mixture. Stir well and allow this mixture to cool.
3. Spread evenly on top of pastry and cover with the remainder of the pastry (rolled to fit).
4. Bake in a pre-heated oven (220C/425F/gas mark 7) until golden brown (approx 25 minutes). When cold, cut into squares and enjoy with a cup of tea or as dessert with custard

I remember my Mum making this as a treat during the war when I was a child. It was a family favourite.
