Ingredients

450g (1lb) dried fruit
150g (5.5 oz) demerara sugar
150g (5.5 oz) margarine
300g (11oz) self-raising flour
140ml (1/3 pint) water
2 eggs (beaten with 120ml of milk)

Method

1. Preheat oven temperature to gas mark 2 - 300 degrees fahrenheit.
2. Place fruit, sugar, marg and water into a large saucepan and bring to the boil, stirring regularly.
3. Reduce the heat and simmer for 20-25 minutes, stirring occasionally.
4. Remove pan from heat and allow mixture to cool.
5. Beat eggs with milk.
6. Add flour and eggs to mixture in saucepan a little at a time until all is absorbed.
7. Grease and line an 8 inch cake tin, pour mixture into this and make for 1 1/2 - 2 hours.

Lovely moist cake, which my family has used as their Christmas Cake recipe for many years. This cake is equally delicious iced or plain.
