Ingredients340g (12oz) pasta - dry or freshTrout fillet (boned, skinned and cut into chunks) 1 red onion (finely chopped) Handful of seafood mix (mussels, prawns, squid etc or your favourites) 1 tbsp capers 1 glass white wine 140g (5oz) creme fraciche 3 anchovy fillets (chopped) 2 sundried tomatoes (chopped) Dill - dried or fresh (chopped) 2 cloves garlic 1 big squirt of tomato puree Dash of lemon juice Parmesan - to sprinkle Fresh basil leaves to serve |
Handy HintHave everything ready - chopping, pasta weighed etc so the whole thing then only takes a few minutes. |

Method1. Take a large pan for your pasta and get ready to have water boiling to cook.2. In some olive oil fry the garlic and onion together stir in the fish and fry for a minute or two. 3. Add capers, sundried tomatoes anchovies herbs tomato purée, lemon juice and wine and simmer for 2-3 minutes. 4. Add crème fraîche but do not boil just heat through 5. Cook the pasta meanwhile only to al dente (to the tooth). 6. Mix the sauce in to the pasta and serve with basil leaves and grated parmesan. Yummy! |
