Ingredients

750g new potatoes
1 large lemon
1 large red onion
Parsley
Kalamata olives
Oil from the olives
Salt and pepper

Handy Hint

Even sized potatoes are nice left whole but can be cut once cooked.

Method

1. Boil the potatoes and allow to cool.
2. Slice onions and chop parsley.
3. In a large bowl, mix together lemon juice, oil, salt and pepper.
4. Stir in the onions and olives and then add potatoes.
5. Check seasoning and serve.

I like this recipe but would get the potatoes mixed with the onion and the dressing while STILL WARM, as you do for Austrian potato salad, the potatoes absorb more flavour.
