Ingredients

450g (1lb) chestnuts cooked and peeled
115g (4oz) walnut pieces
115g (4oz) mashed potato
1-2 beaten eggs
Seasoning

Handy Hint

Ideal to have cold, sliced with pickles or as an alternative to chestnut stuffing with turkey. The mashed potato keeps it nice and moist.

Method

1. Place chestnuts and walnuts in a food processor until broken into small pieces then pour into a bowl.
2. Mix in the mashed potato and seasoning to taste then add enough of the beaten eggs to blend together without it becoming too sticky. 3. With your hands mould the mixture into a wide sausage shape and wrap in greased foil. Carefully place this on a baking tray and cook in a moderate oven for 40mins.
