Ingredients1 packet ginger biscuitsMarsala wine 6 eggs 125g caster sugar 500g mascapone cheese 1 cup of strong coffee Cocoa powder for dusting |

Method1. Make the coffee and add 3 tbsp of the marsala wine then put aside to cool.2. Separate the egg yolks and whites, putting each into different bowls. 3. Whip the eggs yolks until thick and then add the mascapone, and whisk until blended together. Add a tbsp of the marsala wine whilst blending together. 4. Whisk the egg whites and sugar together into soft peaks and then fold into the mascapone mix. 5. Dip ginger biscuits into the coffee mix and line the bottom of a glass bowl. 6. Spread over half the mascapone mixture, and then make another layer of coffee soaked ginger biscuits. Spread the remaining mascapone layer and sprinkle with cocoa powder. |
