Ingredients

Any or all of the following veg, chopped into medium size pieces:

Onion (red or white)
Spring onion
Courgette
Carrot (cooked)
Green, red or yellow pepper (or a mix of the three)
Tomatoes
Boiled potatoes (leftovers work well)
Mushrooms
Green beans
Green or black olives.

Plus

1 medium chilli (chopped very small or a good teaspoon of dried chilli flakes - simply omit if you hate chilli)
1 garlic clove crushed
1 level tsp instant ginger flakes (jar or packet)
1 dsp any jar pesto
Black Pepper, salt
Any leftover or raw meat (eg: pork, beef, chicken, sausages,
bacon, chorizo. Any amount large or small is fine. Omit for vegetarian version)
Spray Olive Oil

Handy Hint

Once the meat is added, just give it a couple of sprays of oil to stop it drying out.

Method

1. Put all your chopped veg into a Swiss roll tin in one layer, and spray well with the olive oil. Season lightly with pepper and salt, add chopped chillies, garlic and ginger. Mix everything well using your clean hands.
2. Add the pesto, stir in well.
3. Put on top shelf of oven for 20-25 mins till veg are just browning round edges.
4. Meanwhile chop raw or cooked meat into medium pieces. If raw, quickly stir-fry in spray Olive Oil for a few minutes till almost cooked through. Add meat to the veggies during last 10 minutes of cooking.

Serve with rice, cous cous, jacket potato. hot crusty bread or even chips. Whatever you have!

Eek - forgot to say it's a good idea to get your oven good and hot at 180 degrees C or 160 degrees if using a Fan oven.

This recipe serves two very good helpings. If you need more, pile the veggies a little deeper, but turn them about 15 minutes into the cooking time. Don't forget to add a bit more Pesto. If you omit the meat, and sprinkle a good layer of any hard cheese over about 20 mins into the cooking time, it will make a good veggie only option. , and is gret served with Walnut Bread - yum.
