Ingredients

450g (1lb) button mushrooms
1 clove garlic
85ml (3 fl oz) olive oil
50ml (2 fl oz) wine vinegar
1 small onion (finely chopped)
Salt & pepper

Handy Hint

Can be kept for several days if kept covered in the fridge.

Method

1. Peel mushrooms. Slice if large, otherwise leave whole.
2. Crush the garlic with the salt.
3. Slowly whisk in the oil and vinegar and continue whisking till it turns a nice yellow colour. Then mix in the pepper and onions, and lastly the mushrooms.
4. Leave them covered to marinate for at least 1 hour, stirring occasionally.
