Ingredients300ml (approx) double cream3 large/4 small bananas 1 lemon 1 tbsp demarara sugar Glace cherries, angelica etc for decoration |
Handy HintQuantities can be varied according the the level of sweetness required, the decoration can be varied (or omitted), and the quantity of bananas can be varied according to taste. |

Method1. Using a potato masher, mash the bananas in a bowl - they need to be liquidy.2. Finely grate the lemon peel (don't go deep, no pith wanted) into the bowl with the squashed bananas and then squeeze the lemon juice into the bowl. Add, say the sugar (to taste, variable amount). 3. In a separate bowl whip the double cream until stiff. 4. Fold in the banana mixture then put into a serving dish. Decorate as wished - halved glace cherries with angelica look very Christmassy. Keep in the fridge. |
