Ingredients2 tbsp olive oil500g mixed nuts (eg: brazils, almonds, cashews, pistachios, walnuts 1 1/2 tsp ground mixed spice 1 tsp chilli powder 1 tsp sea solt 3 tbsp soft brown sugar |

Method1. Lightly oil a baking tray (or line with non-stick baking paper).2. Heat a pan & add oil & nuts. Toss around until nuts have become golden. 3. Stir in the mixed spice, chilli powder & salt. Toss for about 30 seconds & then sprinkle over the sugar. Turn around in the pan until the sugar begins to caramelise & coat the nuts. 4. Tip out onto the prepared baking tray & leave to cool. 5. When cold, break up the nuts that are stuck together & keep in jar or airtight container until needed. | |||||||||||||||||||
