Ingredients4 fillets white fish1 tbsp oil 1 sliced onion 1 clove garlic Cider (about 1/4 litre/1/2 pint) 1 tsp basil 4 tbsp creme fraiche |

Method1. In a large frying pan/saute pan soften the onion & garlic in the oil.2. When soft place fish on top, cover with cider, add basil & cook for about 5-7 minutes until just done. 3. Remove fish & keep warm. Boil cider & reduce to about half, stir in creme fraiche & stir until smooth & cream. Serve fish with either pasta or new potatoes & cover with sauce |
