Ingredients

8 rashers back bacon (cut into small pieces)
1 onion (diced finely)
200g button mushrooms (halved)
400g can new potatoes (chopped)
6 medium eggs (lightly beaten)
200g tomatoes (quartered)
120g cheddar cheese (grated)
Salt and pepper to taste

Method

1. Warm some oil in a large frying pan. When hot add the bacon, onion and mushroom and stir fry until brown and cooked. Add the potatoes and stir well, reduce heat to medium
2. Whisk the eggs in a bowl and add salt and pepper to taste, pour over the mixture in the pan and scatter over the tomatoes. Cook for 10-12 mins until the base is set.
3. Preheat the grill, scatter the cheese over the mixture and grill for 4-5 mins until golden and set. Cut into wedges and serve
