Ingredients

100g brown rice
Large tin of kidney beans (or mixed beans)
1 large onion
5 sun dried tomatoes
1/2 tsp crystal salt
Ground black pepper to taste

Handy Hint

The sun dried tomatoes give this dish a better taste. It can be put in a covered dish in the oven and kept warm. You could add grated cheese if you wished.

Method

1. Cook the brown rice and drain
2. Chop and fry the onions
3. Chop the sun dried tomatoes and add to fried onions
4. Heat the beans and drain
5. Mix all ingredients together and add salt and pepper then serve

I love this dish as it is healthy, filling and cheap. It can be served on it's own, hot or cold, or with other food.
