Ingredients

100g (4oz) butter
2 large overripe bananas
4-6 lumps stem ginger (chopped)
100g (4oz) soft brown or light muscovado sugar
100g (4oz) self raising flour
2 heaped tbsp ground cinnamon
2 large eggs
2 tbsp milk

Handy Hint

Could sprinkle with icing sugar to serve. Nice with cream or ice cream as pudding. Chop the ginger in generous sized lumps. Use more stem ginger if you are feeling generous.

Method

1. Whisk the eggs and then whisk in flour, sugar, cinnamon and milk.
2. Put butter in baking dish and just melt in microwave and add to whisked ingredients and whisk again.
3. Mash the banana in 1 litre microwave proof baking dish, reserving a few slices for topping and mix in chopped stem ginger.
4. Pour into batter and mix together thoroughly adding banana slices to top.
5. Cook in microwave for exactly 8 minutes (800 watt microwave).
