Ingredients

3 medium leeks (lightly steamed)
2 rings black pudding (fried for a few minutes)
1 large cooking apple
1 tbsp fresh thyme (or 1/2 tbsp dried thyme)
2-3 tbsp olive oil.
2 tbsp balsamic vinegar

Handy Hint

People love or hate black pudding so best not to serve to any old guest

Method

1. Heat the oil in a sauté pan or wok
2. Gently fry the chopped apple
3. Add leeks and black pudding
4. When hot throw in the vinegar
5. Serve with sprinkling of thyme
