Ingredients

1 pack of ready made/ready rolled puff pastry (320 gr) or similar sized pizza base
1 courgette (very thinly sliced)
2 apples (cored and very thinly sliced (I leave the skins on as they look pretty))
1 med onion (very thinly sliced)
Oil or butter for frying
Fresh or dried herbs (sage or rosemary are good)
Salt and pepper to taste
85g (3oz) crumbled blue cheese (or any cheese you like)
Chopped walnuts (optional)

Method

1. Preheat oven according to pastry/pizza base directions.
2. Slice the courgette, cored apple, and onion as thinly as you can. I use the finest blade on my mandolin.
3. Heat butter and oil in a frying pan and saute the onion and courgette until golden. You may add fresh herbs at this point if using. Season to taste.
4. Open the pastry sheet, or pizza base, onto an baking tray. Prick the base if using pastry. Arrange the apple slices to cover the base to within 1cm (1/2 inch) of the edges.
5. Scatter the cooked courgette and onion over the top, along with nuts if using. Crumble the cheese over the top of the vegetables. Glaze pastry edges if desired.
6. Bake for about 18-23 minutes or until cheese is melted and bubbling and the pastry is golden and cooked.
7. Serve warm or chilled. This will feed two hungry people, or four as a starter. You could make four individual ones by cutting the pastry into rectangles and dividing the mixture accordingly.
