Ingredients

225g (8oz) self-raising flour
1/4 tsp salt
1/2 tsp mixed spice
110g (4oz) butter/marg
110g (4oz) sugar
255g (9oz) mixed dried fruit
1 egg
1 tsp grated lemon or orange rind
3/4 gill (1 gill = 8 tbsp/quarter pint) milk and water mixed

Handy Hint

This cake keeps well.

Method

1. Preheat oven to 180C/gas mark 4
2. Rub fat into flour, add rest of ingredients and mix well.
3. Bake in 15cm/6" tin for 1 hour 20 mins or in a 900g/2lb loaf tin for 1 hour 15 mins.

This was a recipe given to me by an elderly neighbour. She used to make it for washing day so she didn't have to stop for lunch. She would just have a slice of this with a cuppa to keep her going!!
