900g (2lbs) sugar
115g (4oz) butter
1 tin of condensed milk
Warm water (use the tin from the milk)

Handy Hint

Make sure the sugar has dissolved before you bring to the boil or your fudge will be sugary. If you use half soft brown sugar it gives a lovely flavour.


1. Place all ingredients in a large heavy based pan and stir until the sugar has dissolved.
2. Bring to the boil still stirring and boil until the mixture reaches the soft ball stage i.e. when a few drops form a ball when dropped into cold water.
3. Remove from the heat and beat with an electric mixer until the mixture thickens.
4. Pour into a greased tin, mark in squares and leave until set.
