Ingredients½ pack reduced fat digestive biscuits2 packs light Philadelphia soft cheese 100g low fat unsalted butter 100ml icing sugar 300ml light double cream 25ml Baileys 100g grated chocolate for within the mixture and to sprinkle on top. |
Handy HintI use Bailey’s chocolate just for the extra flavor and it tastes delicious but you can use any grated chocolate that you wish. |

Method1. Melt butter and add the crushed biscuits to it. Put the mixture in an 18cm (7") greased tin and leave to set for about an hour.2. Whip the soft cheese and mix in the Baileys and sieved icing sugar (must be sieved or you’ll get lumps.) 3. Fold in the whipped cream and grated choc. Put the mix onto the cooled biscuits and leave to set in the fridge for approx 2 hours; sprinkle on some more chocolate when you serve. Easy to make! |
