2 red peppers
1 yellow pepper
1 orange pepper
1 onion
Stock cube
Butter/cooking oil

Method

1. Gently fry the chopped peppers and onion in butter/oil until soft.
2. Add about one pint of stock and simmer for about 15 minutes.
3. Blend as much or as little as liked and season to taste.
