Ingredients1 butternut squash
1 onion
2 sticks celery
2 small potatoes
Small pinch of chilli flakes
Salt and black pepper
Pinch of mixed herbs
Vegetable stock cube
Knob of butter |
Handy Hint
Be careful not to add to much water. |
Method1. Melt butter in large pan
2. Add chopped butternut squash; potatoes, onion and celery to pan and on a low light gently sweat the vegetables in the pan with a lid on for 10 minutes.
3. Add pinch of mixed herbs; salt & black pepper and small pinch of chilli flakes.
4. Make up the stock cube using 1 pint of water and add to the vegetables.
5. Bring to the boil then simmer on a low heat until all veg is cooked then add another half pint of water. When the soup is cool use a hand blender to make the soup smooth.
6. Heat and serve with a hot crusty roll.
